Chocolate Chip Oatmeal Cookies

Here’s a delicious oatmeal chocolate chip cookie recipe.  I made these today to bring up to Vermont where we are spending New Year’s with Tim’s brother, his wife, and baby girl.  The cookies are chewy and packed with lots of chocolaty and oat goodness.

The reviews of the recipe suggested reducing the sugars to 1/3 of a cup each since the recipe also calls for maple syrup.  I followed this tip and think the cookies are perfectly sweet.

Hope you enjoy the twist on your basic chocolate chip cookies.

Chocolate Chip Oatmeal Cookies

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups rolled (old-fashioned) oats
  • 1/2 cup coarsely chopped pecans
  • 8 tablespoons (1 stick) unsalted butter, at room temperature
  • 1/2 cup lightly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 3/4 cup semisweet chocolate chips

Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.

In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.

In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. Blend just to combine, then mix in the chocolate chips.

Drop walnut-sized balls of dough onto a nonstick or parchment-lined cookie sheet at 3-inch intervals. With moistened fingers, flatten and round out the cookies a little. Bake for 9 minutes, turning the pan once for even baking. The cookies are done when they are lightly browned on top. Set the cookie sheets on a rack to cool.

Christmas Cookies: Thumbprint Cookies

Merry Christmas to all the Weeknight Gourmet readers!  I was baking this morning so I figured I would share a couple of last minute cookie recipes.

I made a couple of modifications to the thumbprint cookie recipe below.  Instead of lemon juice and zest, I used orange juice and zest.  I also substituted Grand Marnier for Chambord because that’s what I had.  Lastly, I didn’t think the cookies needed a full 20 minutes.  Check on them at 15 minutes.

Raspberry-Lemon Thumbprint Cookies
Emeril Lagasse

1/2 cup raspberry jam or jelly
1 tablespoon Chambord or kirsch
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 sticks (1 cup) butter, at room temperature
2/3 cup sugar
2 large egg yolks
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract

Preheat the oven to 350 degrees F. Lightly butter 2 large baking sheets.
In a small bowl, combine the jam and Chambord. Stir to combine.
In a medium bowl, combine the flour, baking powder, and salt and whisk to blend.

In a large bowl using an electric mixer, beat the butter and sugar until light and creamy. Beat in the egg yolks, lemon zest, lemon juice and vanilla. Add the flour mixture in 2 additions and beat just until moist clumps form. Gather the dough together into a ball.

Pinch off the dough to form 1-inch balls. Place on the prepared baking sheets, spacing 1-inch apart. Use your floured index finger or 1/2 teaspoon measuring spoon to create depressions in the center of each ball. Fill each indentation with nearly 1/2 teaspoon of the jam mixture. Bake until golden brown, about 20 minutes.

Transfer the cookies to wire racks to cool completely.

Christmas Cookies: Chocolate Crinkles

Here is a delicious chocolaty cookie for the holidays!  They are so chewy and rich!  I had splurged and bought some Scharffen Berger Cocoa Powder which gave these cookies an amazing flavor.

Next time I might try rolling half in regular sugar and the other half in confectioners sugar.

Chocolate Crinkles
Real Simple

  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 cup unsweetened cocoa powder (preferably Dutch process)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup light brown sugar
  • 2 large eggs
  • 1/4 cup confectioners’ sugar

Heat oven to 350° F. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

With an electric mixer, beat the butter and brown sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in the eggs. Reduce speed to low and gradually add the flour mixture, mixing until just incorporated.

Form the dough into balls (each equal to 1 level tablespoon). Roll the balls in the confectioners’ sugar and place on parchment-lined baking sheets, spacing them 2 inches apart.

Bake until the cookies are firm and the tops crack, 13 to 15 minutes.Cool slightly on the baking sheets, then transfer to wire racks to cool completely.

Makes 36 cookies.

Christmas Cookies: Chocolate Candy Cane Cookies

Here’s a delicious Christmas cookie recipe that my friend Julia introduced me to — two cake-y chocolate cookies with peppermint flavored buttercream sandwiched between!   DELISH!  The filling gets its flavor from peppermint extract, which you can find in most gourmet grocery stores.

We brought the cookies to the two holiday parties — one Christmas party and one Hanukkah party — we attended over the weekend.  I rolled half of the cookies in crushed candy canes and the other half in blue sugar crystals.  Both looked very festive!

The only note I would make is that the recipe only produced about 10 to 11 sandwich cookies not 18 as the recipe states.

Chocolate Candy Cane Cookies
Bon Appetit

Cookies

  • 1 3/4 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder (preferably Dutch-process)
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 1 large egg

Filling

  • 1 cup plus 2 tablespoons powdered sugar
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
  • 3/4 teaspoon peppermint extract
  • 2 drops (or more) red food coloring
  • 1/2 cup crushed red-and-white-striped candy canes or hard peppermint candies (about 4 ounces)

For cookies:
Whisk flour, cocoa, and salt in medium bowl to blend. Using electric mixer, beat sugar and butter in large bowl until well blended. Beat in egg. Add dry ingredients; beat until blended. Refrigerate dough 1 hour.

Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Scoop out dough by level tablespoonfuls, then roll into smooth balls. Place balls on prepared baking sheets, spacing about 2 inches apart. Using bottom of glass or hands, flatten each ball to 2-inch round (edges will crack). Bake until cookies no longer look wet and small indentation appears when tops of cookies are lightly touched with fingers, about 11 minutes (do not overbake or cookies will become too crisp). Cool on sheet 5 minutes. Transfer chocolate cookies to racks and cool completely.

For filling:
Using electric mixer, beat powdered sugar and butter in medium bowl until well blended. Add peppermint extract and 2 drops food coloring. Beat until light pink and well blended, adding more food coloring by dropfuls if darker pink color is desired. Spread 2 generous teaspoons filling evenly over flat side of 1 cookie to edges; top with another cookie, flat side down, pressing gently to adhere. Repeat with remaining cookies and peppermint filling.

Place crushed candy canes on plate. Roll edges of cookie sandwiches in crushed candies (candies will adhere to filling). (Cookie sandwiches can be made ahead. Store in single layer in airtight container at room temperature up to 3 days or freeze up to 2 weeks.)

Holiday Season Dinner Party Menu!

We had 3 couples over for dinner last night.  Our dear friends Jason and Maria are expecting their second child on New Year’s Eve so we thought it would be fun to have them over — before things get even busier for them — to see some friends.  We had a fun evening and everyone seemed to enjoy the food.

Holiday Desserts: Cranberry Upside-Down Cake

I made this cake for Thanksgiving last year and really enjoyed it so I decided to make for last night.

The cake is incredibly moist — probably because of the milk in the batter — and the cranberry, cinnamon, allspice mixture provides a wonderful holiday flavor!  Plus I think the cake is very pretty.

Cranberry Upside-Down Cake
Everyday Food

  • 8 tablespoons unsalted butter, room temperature
  • 1 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1 3/4 cups cranberries
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk

Preheat oven to 350 degrees with rack in center. Rub the bottom and sides of an 8-inch round cake pan with 2 tablespoons butter. In a small bowl, whisk together 1/2 cup sugar with the cinnamon and allspice. Sprinkle mixture evenly over bottom of pan; arrange cranberries in a single layer on top.

With an electric mixer, cream remaining 6 tablespoons butter and 1/2 cup sugar until light and fluffy. Add egg and vanilla; beat until well combined. In another bowl, whisk together flour, baking powder, and salt. With mixer on low speed, add flour mixture to butter mixture in three batches, alternating with the milk, until well combined.

Spoon batter over cranberries in pan, and smooth top. Place pan on a baking sheet; bake cake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Let cool on a wire rack for 20 minutes. Run a knife around edge of cake; invert onto a rimmed platter.

Holiday Cookies: Best Chocolate Chip Cookies

I was planning to make linzer cookies this weekend but on Friday I read an article in the Wall Street Journal Magazine about Martha Stewart and her daughter Alexis.  At the end of the article, they included Alexis’s chocolate chip cookie recipe which Martha Stewart proclaimed as the best chocolate chip cookie recipe ever.  I just had to try it!

I halved the recipe since the recipe produces 50 cookies.  Other than that, the only change I made was using a mix of semisweet and milk chocolate chips.

The cookies were DELICIOUS!  Thin and crisp but soft inside.  Everyone enjoyed them last night and I gave our guests a few to take home so Tim and I wouldn’t eat the rest!

Alexis’s Brown Sugar Chocolate Chip Cookies

This recipe produces flat and crispy chocolate chip cookies

Ingredients

Makes fifty 4-inch cookies

  • 1 pound (4 sticks) unsalted butter, room temperature, plus more for baking sheets
  • 3 cups packed light-brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 1/2 cups best-quality chocolate chips
Preheat oven to 375 degrees. Line two baking sheets with Silpat baking mats or parchment; set aside. Cream butter until smooth; add sugars, and beat until smooth. Beat in eggs and vanilla. Into a large bowl, sift together dry ingredients. Slowly beat dry ingredients into wet mixture. Fold in chocolate chips.
Drop 2 to 3 tablespoons dough per cookie onto prepared baking sheets; space dough at least 2 inches apart to allow for spreading. Bake until golden, 8 to 10 minutes. Remove cookies from baking sheets, and allow to cool on baking racks.

Thanksgiving Dinner!

We enjoyed a quiet Thanksgiving with my mom in the Berkshires.  Even though it was just three of us (plus Angus), we made the full bird and array of sides.  You shouldn’t have to sacrifice all your favorites tastes of the holiday even if you have a small crowd!  Below was our menu…everything was quite tasty and we all had a great holiday.

Holiday Dessert: Pumpkin Pie

My pumpkin pie last year came out looking better (see big crack in pie on photo below) but it was just as delicious this year.  I’ve used the same Martha Stewart recipe for the past two years and everyone seems to really enjoy it.

I use canned pumpkin and refrigerator pie crust as shortcuts.  I just really don’t love working with pastry and didn’t have the time to roast a pumpkin.  If you buy canned pumpkin, make sure you do not buy canned pumpkin pie filling by mistake — just pure canned pumpkin.

When you skip making the crust yourself, the pie is super quick to make — no excuse for buying a pie.

Pumpkin Pie
Martha Stewart

Makes one 9-inch pie

  • 1 cup packed light-brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1 1/2 cups fresh Pumpkin Puree, or canned
  • 3 large eggs, lightly beaten, plus 1 egg for glaze
  • 1 1/2 cups evaporated milk
  • Pate Brisee (Pie Dough)
  • 1 tablespoon heavy cream

Preheat oven to 425 degrees. Line a baking sheet with parchment paper; set aside. In a large bowl, combine sugar, cornstarch, salt, ginger, cinnamon, cloves, pumpkin puree, and 3 eggs. Beat well. Add evaporated milk, and combine. Set aside.

Between two pieces of plastic wrap, roll pate brisee into a 12-inch circle. Fit pastry into a 9-inch glass pie plate; trim dough evenly along edge, leaving about a 1/2-inch overhang. Pinch to form a decorative edge. If the dough begins to soften, chill for 15 minutes.

Make the glaze: Beat the remaining egg, and combine with heavy cream. Brush glaze very lightly on edges of pie shell. Fill pie shell with pumpkin mixture. Transfer to prepared baking sheet.

Bake for 10 minutes. Reduce heat to 350 degrees and continue baking for 30 minutes more. Cool on a wire rack.

Spooktacular Halloween Cupcakes

In honor of Halloween and as a pre-NYC marathon dessert for my sister-in-law Julina, I decided to bake some cupcakes.  I turned to the Cake Mix Doctor for a delicious and easy recipe.

This recipe “doctors” a devil’s food cake mix by adding a little cocoa and buttermilk.  The cake was super moist!  The icing was a simple buttercream and very tasty!  I added some yellow and red food coloring for a nice orange color.  I skipped the spiders in the recipe and just decorated with some red sugar.

The cupcakes were a hit!  I’ll definitely be making these again.

Halloween Spider Cupcakes
Cake Mix Doctor

Makes 24 cupcakes (2 1/2 inches each)
Preparation time: 30 minutes
Spider chilling time: 30 to 40 minutes
Baking time: 16 to 20 minutes
Assembly time: 15 minutes

24 silver or foil liners for cupcake pans (2 1/2-inch size)

CUPCAKES
1 package (18.25 ounces) plain devil’s food cake mix
2 tablespoons Dutch process cocoa powder
1 1/3 cups buttermilk
1/2 cup vegetable oil
3 large eggs
1 teaspoon pure vanilla extract

FROSTING:
Buttercream Frosting (recipe below)
6 drops yellow food coloring
2 drops red food coloring

GARNISHES:
24 Chocolate Spiders (recipe follows)
Tiny round decorating candies (optional)
Brown decorating gel (optional)

1. Place a rack in the center of the oven and preheat the oven to 350 degrees F. Line 24 cupcake cups with silver paper liners. Set the pans aside.

2. Prepare the cupcake batter: Place the cake mix, cocoa powder, buttermilk, oil, eggs, and vanilla extract in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. Spoon or scoop a heaping 1/4 cup batter into each lined cupcake cup, filling it two thirds of the way full. (You will get between 22 and 24 cupcakes; remove the empty liners, if any.) Place the pans in the oven.

3. Bake the cupcakes until they spring back when lightly pressed with your finger, 16 to 20 minutes. Remove the pans from the oven and place them on wire racks to cool for 5 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool completely, 30 minutes.

4. Meanwhile, prepare the Buttercream Frosting. Place G cup of the frosting in a plastic sandwich bag and set aside. Add the yellow and red food coloring to the remaining frosting. Blend well so the frosting is evenly orange. Place a heaping tablespoon of frosting on each cupcake and swirl to spread it out with a short metal spatula or a spoon, taking care to cover the tops completely.

5. Garnish the cupcakes: Cut off a small piece from one of the bottom corners of the plastic bag holding the frosting. Pipe 2 eyes on each of the Chocolate Spiders. Place a small round decorating candy in the center of each eye, if desired. Place a spider on top of each cupcake. There will be 6 extra spiders for additional platter garnish or simply to enjoy. If you wish, pipe a web on the platter using brown decorating gel. The cupcakes are ready to serve.

Store these cupcakes, uncovered or in a cake saver, at room temperature for up to 2 days or in the refrigerator for up to 1 week. Or freeze the unfrosted and undecorated cupcakes in a cake saver for up to 6 months. Thaw the cupcakes overnight in the refrigerator before frosting, decorating, and serving.

CHOCOLATE SPIDERS
You can make these spiders up to two days before you bake the cupcakes. The six extras make wonderful platter decorations or sweet treats by themselves.

1 1/4 cups chow mein noodles
2 1/2 cups semisweet chocolate chips
1/3 cup milk
1/2 cup confectioners’ sugar
1 cup crispy rice cereal

1. Line a baking sheet with waxed paper and set aside.

2. Measure out 1 cup chow mein noodles and break them into small pieces. Break the remaining noodles into 2-inch pieces. These will be the spiders’ legs. Set the noodles aside in separate groupings.

3. Combine the chocolate chips and milk in a medium-size saucepan over low heat, stirring frequently, until the chocolate has melted and the mixture is smooth, 3 to 4 minutes. Remove the pan from the heat and stir in the confectioners’ sugar, cereal, and the small chow mein noodle pieces until blended. Line a baking sheet with waxed paper. Drop the chocolate mixture by tablespoons in a slightly oblong shape (the body of the spider) onto the prepared baking sheet. You will have about 30 bodies, about 2 inches in size. Immediately insert the noodle legs into the spider bodies, 4 on one side and 4 on the opposite side. Space them evenly apart. Place the baking sheet in the refrigerator and chill the spiders until hardened, 30 to 40 minutes.

4. Once chilled, remove them from the waxed paper by pushing up from the underside of the waxed paper.

Store the spiders in a plastic storage container at room temperature for up to 2 days.

Here’s something to remember when you’re making orange-colored frosting: Use drops of yellow
and red food coloring in a 3 to 1 ratio, adding for example, 6 drops yellow and 2 drops red.

Once the frosting for the cupcakes is made, reserve a small amount of it to pipe on each spider for its eyes.

BUTTERCREAM FROSTING
Makes 2 1/2 cups, enough to frost 24 cupcakes (2 1/2-inch size)
Preparation time: 5 minutes

8 tablespoons (1 stick) butter, at room temperature (see “the Cupcake Doctor says” below)
3 cups confectioners’ sugar, sifted
3 to 4 tablespoons milk
1 teaspoon pure vanilla extract

1.Place the butter in a large mixing bowl. Blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the confectioners’ sugar, 3 tablespoons of the milk, and the vanilla.

2. Blend with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the speed to medium and beat until light and fluffy, 1 minute more. Add up to 1 tablespoon more milk if the frosting seems too stiff.
