Weeknight Chicken: Pan-Roasted Chicken with Olives and Lemon

We had this delicious chicken dish last night.  The recipe packs a ton of flavor into the chicken from the lemon, olives, shallots, and sage!  Plus, the chicken, which was browned on the stove and finished in the oven, was perfectly cooked — not dried out at all .  This recipe is definitely a keeper — sophisticated enough to entertain with but easy enough for a weeknight meal!

I only made two changes — I used 4 bone-in, skin-on breasts instead of a whole chicken cut into 8 pieces and, because the store was out of fresh thyme, I used dried thyme.

I served the chicken with some sliced polenta warmed in a frying pan.  The chicken could definitely be a one-pot meal with some crusty bread or simple green salad on the side.

Pan-Roasted Chicken with Olives and Lemon
Fine Cooking

  • One 4-lb. chicken, cut into eight pieces
  • Kosher salt and freshly ground black pepper
  • 1 medium lemon
  • 1 Tbs. unsalted butter; more as needed
  • 1 Tbs. extra-virgin olive oil
  • 5 medium shallots, peeled and quartered lengthwise
  • 3/4 cup jarred brined olives, rinsed, pitted, and halved
  • 8 fresh sage leaves
  • 6 small fresh or 3 dried bay leaves
  • 2 sprigs fresh thyme, plus 1 tsp. chopped

Position a rack in the center of the oven and heat the oven to 425°F.

Season the chicken generously on all sides with salt and pepper.

Cut the ends off the lemon, stand it on one end, and slice off the peel and the bitter white pith to expose the flesh. Cut the lemon segments from the membranes, letting them drop into a small bowl.  Cut each segment crosswise into 4 pieces.

Heat the butter and the oil in a 12-inch ovenproof skillet over medium-high heat. Working in batches if necessary, cook the chicken skin side down until golden-brown, 5 to 6 minutes. Transfer the chicken to a plate.

Pour off all but 2 Tbs. of the fat. Add the shallots, olives, sage, bay leaves, thyme sprigs, and lemon segments, and cook until fragrant, 1 to 2 minutes.

Return the chicken to the pan skin side up and transfer to the oven. Roast until an instant-read thermometer inserted into the thickest part of a thigh registers 165°F, 18 to 20 minutes. Serve, sprinkled with the chopped thyme.

Serves four.

Super Bowl Cake 2010: Bourbon Praline Cake

I first wrote about, and resumed, my family’s Super Bowl cake tradition last year.  This year I decided to bake a cake inspired by New Orleans since I was rooting for the Saints.

A few notes on this delicious cake…

Definitely follow the instructions to use parchment paper on the bottom of the pan AND the sides.  I only used parchment on the bottom and the cake did not smoothly come out of the springform pan.  In fact, the cake really wasn’t very pretty but Tim didn’t mind since it was so tasty.  I also had to substitute buttermilk since my grocery store was all out.  You can use equal parts milk and plain yogurt or add some lemon juice to milk as a substitute.  I used the yogurt – milk combo.

Overall the cake was moist and wonderfully sweet from the pralines.  I served it with a scoop of vanilla ice cream.  Delicious!


Bourbon Praline Cake

For the Praline Layer:

  • 4 tablespoons unsalted butter, plus more for greasing
  • 1/3 cup packed light brown sugar
  • 1/3 cup light corn syrup
  • 1/4 teaspoon kosher salt
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups pecans, toasted

For the Cake:

  • 1 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon fine salt
  • 1/3 cup buttermilk, at room temperature
  • 2 tablespoons bourbon
  • 1 1/2 sticks unsalted butter, at room temperature
  • 1 1/4 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1/2 cup pecans, toasted and chopped
  • Vanilla ice cream, for serving

Preheat the oven to 350 degrees F. Butter a 9-inch springform pan, then line the bottom and sides with parchment paper and butter the paper. Wrap the outside of the pan with foil.

Make the praline layer: Melt the butter in a saucepan over medium heat. Whisk in the brown sugar, corn syrup, kosher salt and vanilla. Spread in the prepared pan and scatter the pecans on top; set aside.

Make the cake: Whisk the flour, baking soda, nutmeg and fine salt in a large bowl. Whisk the buttermilk and bourbon in another bowl.

Beat the butter and granulated sugar with a mixer on medium-high speed until fluffy, 10 minutes. With the mixer on low, beat in the eggs, one at a time. Add the flour mixture in three parts, alternating with the buttermilk mixture, starting and ending with flour. Fold in the pecans.

Pour the batter into the pan and bake until a toothpick inserted into the center comes out clean, about 1 hour. Cool on a rack, 30 minutes. Remove the springform ring, invert the cake onto a plate and remove the paper. Serve with ice cream.

EASY Spicy Tomato Sauce with Meatballs

I had a very busy week at work and was traveling for part of the week so I haven’t cooked since Sunday.  I didn’t even get a chance to post this super easy meal I made on Sunday after our long drive back from the Berkshires.

We often stop at a Trader Joe’s off the highway in Connecticut on our drive back to New York City.  During our drive I was searching on my phone for something easy to make for dinner.  I found this very quick and easy spicy tomato sauce recipe.  You all know I like spicy food and that I love pasta so I decided this would be a good Sunday night meal.

While I was shopping at Trader Joe’s I noticed their pre-made meatballs.  I had never bought these (or any other) pre-cooked meatballs before.  But I have always been impressed with the quality of Trader Joe’s prepared food and thought that the meatballs would add some additional flavor and protein to our meal.

The meatballs were tasty!  Definitely not a substitute for homemade but perfect for a quick weeknight dinner!  I just added the meatballs to the sauce to allow them to heat through.

The sauce — which was so quick and easy to make — had really nice flavor and tasted like it had been simmering for hours.  Be sure to use high quality canned tomatoes.  We topped whole wheat penne with the sauce, meatballs, parmesan cheese, and Italian parsley.  A tasty Sunday night meal thrown together in 20 minutes!

Pennette with Spicy Tomato Sauce
Food & Wine

  • One 28-ounce can whole tomatoes in tomato puree, drained
  • 1/4 cup extra-virgin olive oil
  • 3 garlic cloves, sliced
  • 1 teaspoon crushed red pepper
  • Salt
  • 3/4 pound whole wheat pennette or penne
  • 2 tablespoons chopped parsley

Bring a large pot of water to a boil. Meanwhile, in a food processor, puree the tomatoes until smooth. Heat the olive oil in a large, deep skillet. Add the sliced garlic and cook over moderately low heat until golden, about 2 minutes. Add the crushed red pepper and cook for 30 seconds. Add the pureed tomatoes and cook over moderately high heat, stirring occasionally, until thickened, about 6 minutes. Season the tomato sauce with salt.

Salt the boiling water. Add the pennette to the pot and cook, stirring occasionally, until al dente. Drain the pasta and add it to the sauce in the skillet. Toss well and spoon into bowls or a serving dish. Sprinkle the pennette with parsley and serve.
